I ran into this salmon-smoking hut in Finnish Village, oddly show-cased at Marché de Noël in Montreux, CH. My Finnish colleague set me straight that it's actually called 'loimulohi'.

It is pretty easy to prepare and it is very good. Remember the wood used should be alder or some other deciduous tree, which does not have resin. Resin will give taste to the fish and that is not what you want.
